Bananas are one of the most popular types of fruit. No wonder: they provide plenty of energy and are ideal for starting the day or for a snack between meals. Storing bananas: why they turn brown 

Almost nobody likes them: bananas with brown spots or overripe products with dark discolored skin. But why does this sometimes happen faster and sometimes slower?

Bananas are tropical fruits that react very quickly to the wrong kind of storage. You can quickly see this from the discoloration of the yellow skin. They ripen through the release of ethylene, which is a natural ripening gas. It has a particularly strong effect at high temperatures. But even if you store your banana in the practical fridge organizer it can quickly turn brown or even black. 

You have probably also experienced that bananas turn brown where they are bruised. This is because bananas are sensitive to mechanical stress due to their soft skin. This releases enzymes that stimulate the decomposition process. If you want to store bananas in the best possible way, you should therefore ensure that they are stored correctly to slow down this process.

Is the black banana in the fridge inedible?

However, the discoloration is often not bad. If the banana still smells fresh and doesn't taste fermented, it is usually safe to eat. This is how you can tell if a banana has gone bad:

  • Excessive browning or black discoloration of the peel: Dark spots or a completely black peel indicate overripeness. The flesh is often soft and mushy. Don't throw them away just yet. You can cut out the spots and use the banana to make a delicious banana bread, for example!
  • Unpleasant smell: A bad banana smells unpleasant, strongly fermented or sweet and sour.
  • Soft and mushy flesh: If the banana sags badly and has hardly any bite left, it is no longer edible.
  • Mold growth: White, green or gray traces of mold on the peel or at the end of the fruit are clear indications that the banana should be discarded.
  • Pest infestation: Small fruit flies or other insects can indicate a banana that has already spoiled.

Storing bananas correctly: in the fridge or not?

To keep bananas fresh in the pantry for as long as possible and preserve their flavor, correct storage is crucial. Bananas are a sensitive type of fruit, which is why you should pay attention to the following points:

  2. Hanging up: Banana bunches can be hung on a special banana hook to avoid bruising. However, this can damage the skin or the stem. If this goes unnoticed, the bananas can become infested with vermin or go bad.
  3. Protect the stalk: Wrap the stem of the banana in cling film or a beeswax cloth to slow down the ripening process.

Is the banana stored correctly in the fridge?

As a tropical fruit, bananas like it warm. They are therefore sensitive to low temperatures. Bananas therefore feel less at home in the fridge. The cold can destroy the cell structure of the skin, causing it to turn black. Although it looks unappetizing, you don't have to throw it away! It only looks inedible, but has retained its taste.

Nevertheless, you can put the last, already very ripe banana in the fridge and keep it there for one to two days. This will slow down the ripening process. Wrap the stem in cling film to reduce the release of ethylene. Then store the banana in the fridge. This will keep the fruit fresh for longer.

Storing opened bananas correctly 

An opened banana can quickly become dry and unappetizing. There are various ways to prevent this:

  • Cover it: Wrap the cut surface of the banana in cling film, a beeswax cloth or cover it with a reusable silicone lid to minimize contact with air.
  • Store in a cool place: Keep the opened banana in the fridge. Don't be put off by the dark skin, the flesh stays fresh for longer when refrigerated.
  • Lemon juice: It can help if you brush the cut surface with a few drops of lemon juice. The acid slows down oxidation in the air and prevents the banana from turning brown.
  • Smoothie or baking: Browse through your pantry. Perhaps you have everything you need to make a delicious smoothie or bake a fresh banana bread. If you don't want to use the banana straight away, you can freeze it and use it later as an ingredient.
